Pear & Almond Muffins

Ingredients

  • 2 eggs
  • ½ cup milk
  • ½ cup extra light olive oil
  • ¾ cup caster sugar
  • 300g canned pears, mashed
  • 1 cup wholemeal self raising flour
  • 1 cup self raising flour
  • 1 tsp cinnamon
  • ½ cup Freshlife Australian Slivered Almonds
  • Extra Freshlife Australian Slivered Almonds and brown sugar for topping

Method

  1. Preheat oven to 180°C and grease 12-hole muffin pan.
  2. In a large bowl, whisk together eggs, milk, oil and sugar. Stir in pear.
  3. Add flours, cinnamon and Freshlife Australian Slivered Almonds and mix until just combined.
  4. Divide mixture between muffin pan and sprinkle tops with extra Freshlife Australian Slivered Almonds and brown sugar.
  5. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Remove from pan. Place on wire rack. Serve warm.
