Pear & Walnut Salad
- 100g baby rocket
- 2 pears
- 1 cup Freshlife Californian Walnuts
- 50g shaved parmesan cheese
- 1 tsp seeded mustard
- Juice of 1 lemon
- 2 tbs olive oil
- Place the rocket leaves into a large bowl and grate one pear into bowl. Core and finely slice the other pear and add to salad.
- Add Freshlife Californian Walnuts and parmesan cheese.
- Whisk together dressing ingredients, and toss gently through salad.
